Fruit and vegetables from our garden in Oualidia

Grown using permaculture principles, our kitchen garden evolves with the seasons. Vegetables, fruit and herbs are harvested here for the restaurant kitchen. We favour heritage and non-hybrid varieties to preserve authentic flavours and the richness of our terroir.

Planting

Much of the sowing begins in our greenhouse. The first seeds are sown from 15 December, and this growing period continues until July.

Heritage tomatoes

The pineapple tomato, with yellow fruit streaked with red, offers a sweet and exotic flavour. Generous and decorative, it is best enjoyed in a salad.
